Spicy Italian Sausage Pasta

This spicy sausage pasta is the prefect weeknight meal when you’re craving something quick, easy and delicious.

The dish features browned vegan sausage crumbles with rigatoni pasta in a rich, spicy tomato based sauce all ready in just 15-20 minutes.

The spice comes from chilli flakes, add more or less to make it to your preferred spice level.

The sauce works with any pasta, you can even make it gluten free by making sure your sausages are gluten free and using gluten free pasta.

The beauty of the pasta sauce is that its made from mostly pantry staples and is the perfect dish for any leftover vegetables you have in your fridge. You could add chopped peppers, zucchini, spinach or any vegetables that need using up.

Simple ingredients – This dish can mostly be made from pantry staples, the only fresh items needed are the sausages, onion and cream. This means its great for whipping together without buying much.

Quick-  This pasta comes together in just 20 minutes- perfect for when you want a quick weeknight meal.

Easy- This is a super easy meal to make with only a few easy steps to follow.

Comforting- A good hearty pasta dish is one of my favorite comfort foods. Perfect for the nights you’re fancying a cozy hug in a bowl.

Vegan sausages- I love a meaty vegan sausage for this but you could use a wholefood vegan sausage, tempeh or tofu if you prefer less processed options.

Notes on the ingredients-

  • Rigatoni pasta – Rigatoni is the perfect tube to trap the sauce inside making sure you get a saucy bite each time. You can use any pasta you like.
  • Vegan sausages – Any vegan sausages will work for this. I used fake meat style sausage but you can use a wholefood sausage if you like. This will also work with tempeh or tofu in place of sausage. If you can find a vegan spicy sausage that will work great.
  • Chopped tomatoes – Tinned tomatoes are perfect for the rich sauce in this pasta. I used tinned cherry tomatoes but you can use ordinary chopped tomatoes or passata if you prefer a sooth sauce.
  • Vegan cream – The cream adds a rich layer to the sauce. I used flora plant cream but you can use any cream you like. Another option is a cashew cream made from soaked cashews blended with water- this is a great wholefood option.
  • Garlic – Fresh, jarred or garlic granules will be fine for this dish. I usually use minced garlic from a jar.
  • Chilli flakes – Chilli flakes make this into spicy sausage pasta. You can adjust the amount of chilli flakes to your liking.
  • Tomato paste – Tomato paste adds a richness to the sauce.
  • Paprika – I used smoked paprika to make the sausage a little smoky. You can omit this if you like but I think it gives the vegan a little smoky chorizo vibe.

Tips for the best spicy sausage pasta

  • Brown off the sausage first to give it extra flavor, slightly caramelizing the edges.
  • Use a pasta shape best for catching the sauce such as rigatoni, orecchiette or penne
  • Taste the sauce as you go to decide whether it needs extra chili flakes or not.

How to make spicy sausage pasta

  • Break up the sausages and fry
  • Add the chili flakes and paprika, remove sausages.
  • Add the onion and oil
  • Add garlic
  • Add tomato paste
  • Add chopped tomatoes, simmer for 10 minutes
  • Add the cream
  • Add the sausage
  • Add the cooked pasta, stir then serve.

Ingredients
  

  • 150 g Rigatoni pasta dry weight
  • 6 Vegan sausages
  • 1 Tin of chopped tomatoes
  • 100 ml Vegan cream
  • 3 Cloves of garlic
  • 1 tsp Chilli flakes
  • ½ Onion
  • 1 tbsp Tomato paste
  • 1 tsp Paprika
  • 1 tsp Salt

Instructions
 

  • Break up the sausages and fry until starting to crisp up.
  • Add the paprika and chilli flakes and stir to coat the sausages.
  • Remove the sausage pieces and set aside.
  • In the same pan add diced onion with a little oil, cook until soft.
  • Now add the garlic, tin of tomatoes and the tomato paste and simmer with the lid on for 10 minutes.
  • Meanwhile boil the pasta.
  • Add the sausages back into the tomato sauce, followed by the cream and heat through.
  • Add the cooked pasta and stir until everything is mixed together.
  • Serve up topped with some fresh parsley.

Notes

Make ahead- You can make the pasta sauce ahead and cook the sausages but I recommend boiling the pasta fresh to serve.
