Jerk Inspired Lentils
Vegan jerk-inspired lentils offer a tantalizing twist on traditional lentil dishes by infusing them with the bold and aromatic flavours of Jamaican jerk seasoning.

Ingredients
  

  • 1 can brown lentils
  • 1 large red onion
  • 1 tin chopped tomatoes
  • 2 cloves of garlic
  • 1 red chilli
  • 1 tsp ginger paste
  • 2 spring onions
  • 1 tbsp olive oil
  • Juice of a whole lime
  • 1 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp brown sugar

Spice blend

  • ½ tsp nutmeg
  • ½ tsp cinnamon
  • 1 tsp ground allspice
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp salt

Instructions
 

  • Firstly to make the jerk paste add to a food processor half of the onion, the garlic cloves, the ginger, the chilli, spring onions, olive oil, lime juice, soy sauce, vinegar and the spice blend.
  • Process this until smooth and set aside.
  • Dice the other half of the onion and fry off until soft in some olive oil.
  • Add the jerk paste and mix well.
  • Next add in the tomatoes and leave the mix to simmer for 15 minutes.
  • Lastly add in the lentils with their juice from the can and cook this down until it thickens.
  • Serve up with some rice and a squeeze of lime juice over the top.
