Sweet and Sour Tofu
Crispy tofu cubes are coated in a sweet and tangy sauce. This dish provides a delightful combination of textures, perfect for serving over rice or noodles.

Ingredients
  

  • 280 g Tofu Extra firm
  • 2 tbsp Cornflour
  • 1/2 Red bell pepper
  • 1/2 Onion
  • 20 g Tinned pineapple (keep the juice)

For The Sauce

  • 2 tbsp Tomato ketchup
  • 1 tbsp Rice vinegar
  • 1 tbsp Brown sugar
  • All of the pineapple juice from the tin
  • 1 tbsp Soy sauce
  • 1 tbsp Cornflour mixed with 2 tbsp water

Instructions
 

  • Rip up the tofu into bitesize chunks and coat in 2 tbsp cornflour. Fry off until golden and set aside.
  • Dice the onion, bell pepper and pineapple (if not diced already).
  • Fry the onions for 1 minute, add the peppers and cook for 5 minutes adding the pineapple in the last minute.
  • Add the tofu back into the pan with the veg.
  • Mix up all of the sauce ingredients and pour into the pan. Cook until the sauce becomes sticky.
  • Serve up with some sticky rice and your favourite stir fried veg.

Notes

Frying the tofu- When frying the tofu be sure to fry in small batches to avoid it sticking together or not cooking well.
Trouble shooting your sauce- The sauce is a preference and people like it different. Taste your sauce before adding into the tofu and if its not sweet enough add more sugar or no sour enough add more vinegar. After adding to the tofu and cooking for a few minutes if you fins the sauce is too thin add some more cornflour mixed with water. If you’re finding it is too thick add a splash of water.
