Ingredients

  • 250 g Vegan egg style noodles
  • 1 White onion
  • 250 g Beansprouts
  • 1 tbsp Sesame oil
  • 1 tbsp Dark soy sauce
  • 1 tbsp Light soy sauce
  • 1 tsp MSG
  • ½ tsp White pepper
  • ½ tsp Salt

Instructions

  • Cook the noodles to packet instructions, rinse off with cold water then fill the pan with cold water and leave the noodles in there whilst you get started on the rest.
  • Slice the onions thinly and fry until soft in an oiled frying pan.
  • Turn the pan to high heat and add the noodles.
  • Leave the noodles to get a slight char on the bottom before stirring.
  • Add in the MSG, white pepper and salt and stir to coat the noodles.
  • Now add in the bean sprouts and stir fry until cooked.
  • Lastly add in the soy sauces and sesame oil to finish.
  • Toss well to combine then serve.

Notes

  • dont overcook your noodles- it is important to cook the noodles as per the packaging instructions and not a second longer. As the noodle will be stir fried after you don't want to start with already overcooked noodles. Cook the noodles and then immediately rinse in cold water to stop the cooking process and rinse off the excess starch.
  • use enough oil and not let it get hot enough- stir fried noodles require a sufficient amount of hot oil to get that char and should only be cooked briefly on high heat.
  • MSG!! MSG is one of the reasons that Chinese food tastes so good- be sure to use it to ensure the authentic takeaway taste.
