I’m fully in my butter bean era right now and honestly, this recipe might be one of my favourites yet. These Greek butter beans are packed with fresh lemon, oregano, garlic, and olive oil creating the dreamiest creamy sauce that clings perfectly to every giant butter bean. If you love easy Mediterranean-inspired dishes, these lemon herb butter beans are about to become your new obsession.

The combination of lemon and oregano gives this dish those classic Greek flavors. It tastes like something you’d order at a little seaside taverna but it comes together in just 10 minutes using mostly pantry staples.

Butter beans are loaded with plant-based protein and fibre making them perfect for a quick healthy lunch or easy weeknight side dish. I love serving these Greek style butter beans warm with crusty bread, but they’re just as good cold straight from the fridge which makes them ideal for BBQ spreads, summer salads, and meal prep too.

Pair them with a fresh chopped salad, roasted vegetables, or your favourite vegan BBQ proteins for the ultimate Mediterranean-inspired plate. If you’ve got a tin of butter beans sitting in the cupboard, this easy butter bean recipe is the perfect excuse to use them.

Ingredients you'll need to make Greek beans-

  • Cooked butter beans- You can use a jar or can of beans just be sure to keep their juice as this will create the thick sauce the beans will be served in. You can cook beans from scratch but keep the water they were cooked in. This recipe will work with any other white beans too.
  • Whole lemon- The zest and juice are used in this recipe. If you like it super lemony feel free to use the juice of the whole lemon.
  • Vegan feta- Feta is a rich salty cheese that cuts through the lemon in this dish, it’s the perfect cheese pairing. Feel free to omit if you don’t fancy a cheese topping. These beans can also be served with a protein.
  • Fresh parsley- A sprinkle of parsley tops this dish off giving it a freshness.
  • Herb mix- These herbs are mostly store cupboard basics. Feel free to omit any that you don’t like but the combination is the perfect seasoning for these beans. You can use fresh herbs if you like.

What to serve with butter beans

I love to add beans to a nourish bowl and these Greek style beans would work so well in my Gyros tofu bowl. They're also great as a warm side dish with some grilled vegan chicken and roasted lemon potatoes.

Ingredients
  

  • 240 g Butter beans cooked
  • 1 whole Lemon

For the herb mix

  • 2 tsp Oregano
  • 1 tsp Garlic granules
  • 1 tsp Dried thyme
  • 1/2 tsp Black pepper
  • 1/2 tsp Dried mint
  • 1/2 tsp Salt

Instructions
 

  • Grate the zest off of the whole lemon and set aside in a bowl.
  • Cut the lemon in half and keep the juice of half of the lemon.
  • Add the butter beans and their juice into a pan and simmer on a low heat.
  • Add the lemon juice, zest and herb mix.
  • Continue to simmer until the sauce thickens.
  • Taste for seasoning before serving.
  • Serve up in a bowl topped with crumbled vegan feta and a sprinkle of fresh parsley.

Notes

Liquid- If you don’t want to use the bean juice for extra flavour you could use vegetable stock in place of this. Add little and often as you go as to not make the broth too watery.
Beans- Good quality beans will really take this dish to the next level. I would recommend jarred beans and giant or queen beans if you can.
