Vegan Lunch Meat Recipe

If you want something tasty to throw into sandwiches, wraps, or salads, this vegan lunch meat is such a game changer.

Itโ€™s basically a home made lunch meat that tastes a bit like classic chicken lunch meat, but without any of the stuff youโ€™re trying to avoid  no cholesterol, low fat, high protein and actually full of flavour.

The ingredient list is as simple as it gets: just tofu, a bit of vegan chicken powder, and some herbs. Thatโ€™s it. No weird fillers, no complicated steps, and totally plant based lunch meat vibes.

Plus, itโ€™s naturally gluten free lunch meat and a super healthy lunch meat alternative if youโ€™re wanting something clean and homemade for the week.

Salt boiling tofu

Boiling tofu in salted water helps to improve the tofu texture and enables the tofu to absorb more flavor. This recipe uses vegan chicken stock powder which is made of salt and flavorings so the salt pushes the water out and lets the flavorings in.

I think you should make this vegan sandwich meat because its

Cheap- Just a block of extra firm tofu and seasonings you probably already have in your cupboard make this a super cheap sandwich filler option

Easy- Its simply a case of thinly slicing tofu, boiling in seasonings and leaving to cool before loading into a sandwich.

Quick- This recipe takes less than 15 minutes from start to finish.

Healthy- Tofu is low fat, high protein and a minimally processed ingredient making it a perfect choice for a healthy sandwich filler.

Seasoning the sandwich meat

It may seem like the salt levels are high in this recipe but the tofu doesn't absorb it all, if you put too little the tofu will be flavorless so make sure to season more than you think.

Notes on the ingredients-

  • Extra firm tofu - Extra firm tofu is key in this recipe as it has the strongest structure making it less prone to breaking. If you use a less firm tofu it wont hold its shape.
  • Vegan chicken stock powder - I use massels chicken stock powder as its accidentally vegan. Use whichever you have or use veggie bouillon instead.
  • Seasonings -For seasonings I went for a garlic and herb style blend but you can use whatever you like- this recipe is versatile and can be flavored according to the sandwich you're making.

How to make healthy vegan deli slices

  • Using a vegetable peeler cut the tofu into strips.
  • Add the seasonings to water
  • Bring the mix to a light simmer
  • Drop the tofu into the mix
  • Boil for 15 minutes and drain
  • Your sandwich meat is ready to use

Top tip!- Be super careful when handling the tofu deli meat as it is very delicate.

Ingredients
  

  • 225 g Extra firm tofu
  • 1 tbsp Vegan chicken powder
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Rosemary
  • 1 tsp Thyme
  • 1 tsp Oregano

Instructions
 

  • With a potato peeler cut slices of tofu.
  • To a saucepan add the vegan chicken powder and seasonings with 4 cups of hot water.
  • Add the tofu to the broth and simmer for 15 minutes.
  • Drain the tofu and pat dry.
  • Add to your sandwich and enjoy.
