Giant Gnocchi Noodles

I love gnocchi and I love noodles. I particularly love chewy, thick noodles which is also the texture that boiled gnocchi provides so it only made sense to make a giant gnocchi noodle.

These gnocchi noodles have a great texture, they pair well with any pasta style or noodle style sauce and they’re also just a bit of fun.

This version pairs the noodles with a Chinese style noodle sauce with classic Chinese flavours.

Best of all the recipe is simple and doesn’t take too long. So if you also love gnocchi and noodles then make this recipe for something new and fun!

Reasons you'll love these giant gnocchi noodles-

EASY- The noodles are easy to make with just 3 ingredients and only need boiling for a few minutes to cook.

CHEWY- The thick, chewy type of noodle are my favourite and I don’t think you can get thicker or chewier than these!

CUSTOMISABLE- As they are kind of a noodle, kind of a pasta they go well with any sauce you would typically put on a noodle or pasta. So make them yours with your fave sauce.

CHEAP- To make the actual noodle you only need basic potatoes, plain flour and salt. All of which you probably have in your pantry already.

Giant noodles ingredients and substitutes-

  • Potato- The base of gnocchi is potato, boiled until completely soft and mashed until completely lump free. You can use any type of potato for this.
  • Plain flour- Plain flour is good for these but you can also use 00 flour which is typically used in pasta for a smoother dough.
  • Garlic & ginger paste- For speed and ease I always have a jar of garlic and ginger paste but you can use fresh if you like.
  • Sesame seeds- Sesame seeds have a nutty flavour, I used them as garnish that give a little nutrients as an added bonus. You can omit or add thinly sliced spring onions for garnish.
  • Sesame oil- Sesame oil gives a roasted, nutty flavour commonly used in Chinese noodle sauces. Be sure to use pure sesame oil for maximum flavour. You can buy this is most supermarkets east Asian section or have a look in your local Chinese shop.
  • Dark soy sauce- Dark soy sauce is super rich so I only use a small amount for these noodles. They bring a savoury element and some colour to the noodles.

Ingredients
  

  • 250 g Peeled uncooked potato
  • 150 g Plain flour
  • ¼ Tsp salt

For the sauce-

  • 1 Tsp garlic paste
  • 1 Tsp ginger paste
  • 1 Tsp sesame seeds
  • 1 Tbsp sesame oil
  • 1 Tbsp dark soy sauce

Instructions
 

  • 250g Peeled uncooked potato
  • 150g Plain flour
  • ¼ Tsp salt

For the sauce-

  • 1 Tsp garlic paste
  • 1 Tsp ginger paste
  • 1 Tsp sesame seeds
  • 1 Tbsp sesame oil
  • 1 Tbsp dark soy sauce
  • Dice the potato into even sized cubes and boil until fork tender.
  • Drain the potatoes and leave to dry out.
  • Pass the potato cubes through a sieve into a big mixing bowl.
  • Add the flour and salt and knead until a soft ball forms.
  • Roll them into noodles and gently place them into a pot of boiling salted water until they float.
  • Whilst the noodles are boiling add the sauce ingredients to a bowl that will fit the noodles in.
  • Drain the noodles and add to the bowl.
  • Mix really well, top with sesame seeds to serve and enjoy.

Notes

Kneading the dough- When kneading just combine the flour and potato until it forms a ball, do not over knead as this will give a tougher noodle.
Cooking- When the noodles float to the surface they should be cooked. If you are unsure break a piece of to check its cooked all the way through.
