Caramelized Onion and Cheese Mashed Potatoes
Mashed potatoes in any form are truly wonderful but sometimes I fancy elevating this classic and making it super fancy. Something that is better than mashed potato is flavoured mashed potato.
The combination of a sharp cheesy flavour and sweet caramelised onion is a match made in heaven.
Caramelised onions are a labour of love so make sure to make this dish when you have time, patience and are willing to make your food with a little more love than usual! You’ll be stood over the stove for a while tending to the perfect caramelised onions.
This mash will take your dinner to another level of flavour, it’s a show stopper for a dinner party, Christmas dinner or just when you fancy treating yourself to something fancy!

Caramelized onion mashed potatoes ingredients and substitutes-
- Potatoes- Choose a starchy potato that is perfect for mashing, the variety vary from country to country however in the UK I usually use a good all-rounder such as Maris piper.
- Onions- Standard white onions work well for this dish. For a slightly sweeter flavour use shallots and a stronger onion flavour you can use red onions. Three onions may sound like a lot however they cook down lots when caramelised so make sure to stick to the three medium sized onions.
- Sugar- Brown sugar is added to caramelise the onions, giving them a rich slightly sweet flavour. You can omit the sugar if you like.
- Vegan butter- For most recipes I would use the cheapest vegan butter but as this butter adds flavour and we’re making luxury mashed potatoes I’d recommend splashing out on a great tasting salted vegan butter.
- Vegan cheese- Vegan cheese is well known for not being very strong in flavour and having trouble melting, so be sure to choose a vegan cheese that you know will melt well and give a cheesy flavour to the mash. In the UK I used cathedral city. If you cant find a strong cheese add some nutritional yeast along side a mild cheese.
- Garlic- I used garlic granules in this dish but I would highly recommend using roasted garlic if you remember to put it in the oven (unlike me!). I wouldn’t recommend raw garlic for this as you don’t want the garlic to overpower the other flavours here.


Vegan cheese and caramelised onion mashed potato
Ingredients
- 1.5 Kg white potatoes
- 3 Large white onions
- 40 g Vegan butter + some to top
- 100 g Melty vegan cheese
- 1 tsp garlic granules
- 1 tsp sugar
- 1 tsp salt
- 1 tsp white pepper
- 1 tsp black pepper
- 1 tbsp olive oil
- 1 tsp parsley
Instructions
- Slice the onions into thin strips and add to a large frying pan with one tablespoon of olive oil.
- Keep the onions on medium low heat and stir throughout the caramelisation adding the sugar half way through. This can take around 30 minutes for fully caramelised onions so have patience for the finished product!
- Peel the potatoes and chop into even sized cubes.
- Boil the potatoes in salted water until soft. To test the potatoes take out the biggest cube and try to crush with a fork. Make sure it is super soft and easy to mash.
- Drain the potatoes and return to the pan to mash.
- To the potatoes add the butter, garlic, salt, pepper, cheese and parsley.
- Mash until smooth.
- Fold in most of the caramelised onions saving some for the topping.
- Once all combined serve up topped with a knob of butter, more cheese, the rest of the caramelised onions and sprinkle on some parsley.
