Vegan Buffalo Chicken Wings
Wing stop just opened their first store in Australia and everyone is talking about it. As a vegan of 6 years I have never tried wing stop as they don’t have anything vegan however I like the concept of the different flavors- some dry and some saucy.
The top of the list of wing stop flavors that I like the sound of is traditional buffalo. I decided I wanted to replicate the buffalo sauce wings using enoki mushrooms. The buffalo sauce is both sweet and spicy and pairs well with awing stop ranch dip -homemade of course.
Vegan chicken wings is one of my favorite recipes with enoki mushrooms. The mushrooms form strings strands that replicate the strands of chicken well and the seasoned batter crisps up and goes golden when fried.
Over all these enoki mushroom chicken wings are a real treat and one to make when those takeout cravings are hitting hard!

TEXTURE – Pulling apart the enoki mushrooms makes them into thin strands that replicate the texture of chicken.
PLANT BASED- These wings look pretty realistic however they are of course 100% plant based and made with no actual chickens!
SAUCY- Drowning the wings in buffalo sauce makes for a messy yet satisfying treat- be sure to have a napkin close by when eating.
A TREAT- We all need a treat once in a while and these buffalo wings are a great treat when you’re craving a takeaway. Serve up with some chips and ranch dip for a full meal!

Vegan buffalo wings ingredients and substitutes-
- Enoki mushroom- Enoki mushrooms are a thin stringy type of mushroom the grow in clusters. The stringy texture replicates meat fibres making them a great veggie alternative to chicken. I buy them at the farmers market or my local Chinese supermarket.
- Soy milk- Soy milk makes the wet batter. I always use unsweetened for savoury dishes as I find soy milk is the least sweet and has a neutral flavour. You can use any plant milk you like.
- Vegan butter- I use the brand Nuttlex buttery here in Australia as its flavoured like real butter. You can use any plant based butter you like however the more buttery it tastes the better.
- Golden syrup- Golden syrup gives a sweetness to the sauce that offsets the spiciness, I like this as I love the flavour of the buffalo sauce but not so much the spicy part. You can use any syrup for this.
- Buffalo sauce- Franks red hot buffalo wing sauce is the best sauce for this however you can use any hot sauce you like.
How to cook enoki mushroom wing stop buffalo wings.
- Pull apart the mushrooms
- Add mushrooms to the wet batter
- Form into wing shapes
- Cover in seasoned flour
- Fry
- Coat in sauce.


Vegan Buffalo Chicken Wings
Ingredients
- 150 g Enoki mushroom
- 200 g Plain flour
- 100 ml Soy milk
- 1 tsp Salt
- 1 tsp Garlic granules
- 1 tsp Onion powder
- ½ tsp Black pepper
For the sauce-
- 50 g Vegan butter
- 2 tbsp Golden syrup
- 2 Tbsp Buffalo sauce
Instructions
- Pull apart the enoki mushrooms until you have a bowl of strands.
- Combine the flour with the garlic granules, onion powder, black pepper and salt and mix well to combine.
- Take half of the seasoned flour and add to a separate bowl. Mix in the soy milk until a smooth batter has formed.
- Add the enoki mushrooms into the batter and mix really well to coat each mushroom in batter.
- Form the enoki into wing shapes and add to the dry flour.
- Pack the flour onto all areas of the wing making sure there are no wet bits left.
- Fry on a medium heat until golden and crispy and cooked in the middle.
- For the sauce melt the butter then add the golden syrup and buffalo sauce and mix well.
- Toss the wings in the sauce and serve up.
