Roasted Cauliflower Steaks

I promise this Greek roasted cauliflower is not your average sad, soggy side dish. If you think cauliflower is bland, chances are you’ve only had it boiled and never given a proper chance to shine. Honestly, this veg just needs a bit of love (and some bold flavour) to completely transform it.

This is very much a Greek style cauliflower situation- not authentic but giving all of the Greek flavour think punchy herbs, olive oil, a little tang, and loads of flavour baked right in.

Roasting completely changes the game too. You get those golden, slightly crispy edges and a soft, almost buttery centre. It’s the kind of dish where you suddenly realise you could eat a whole head of cauliflower without even trying.

For this recipe, we’re cutting the cauliflower into thick slabs, then seared first for extra colour, brushed with a our Greek-inspired seasoning, then roasted until perfectly tender and a little crispy. The steaks then get topped with diced kalamata olives and extra virgin olive oil for a rich, salty finish.

And if you’re short on time (or just obsessed with your air fryer), you can absolutely turn this into air fried cauliflower instead same vibes, just quicker and extra crispy.

Cauliflower is cheap, accessible, and seriously underrated, so if you’ve been stuck in a boring veg rut, this is your sign to switch things up and fall back in love with it.

Roasted cauliflower ingredients and substitutes-

  • Cauliflower- Try to get a large head of cauliflower that you’ll be able to cut two thick steaks from. The rest can also be roasted the same way but cutting into steak slabs just looks good! If you can only find a small cauliflower that’s fine just roast for less time.
  • Olive oil- Olive oil is added to the dry seasoning to make a seasoning paste. You can use any oil here its just to help the cauliflower crisp up and make the seasoning easier to spread.
  • Oregano- Oregano is possibly the most common herb in Greek cooking making it a must use herb. I use dried oregano but if you can use fresh that will be better.
  • Lemon juice- Lemon juice is added to the seasoning blend for a citrussy pop you can use fresh or bottled lemon but do not substitute this for anything else.
  • Paprika- Paprika brings a smokey element and colour to the cauliflower making it taste and look great. Smoked or hot paprika is also fine depending on how you like it or what you have available.
  • Kalamata olives- The olives diced up finely for the topping bring a deep savoury and salty element to finish off the cauliflower. Kalamata olives are Greek purple olives that are softer and richer than the green olive so use them if you can.

Tips for the best cauliflower steaks

  • To keep the steaks in one piece don't cut off the stalk- this helps them hold together for baking (you can remove this after baking if you prefer not to eat it)
  • Try to keep the steaks the same thickness by using a sharp knife to slice right through.
  • To get a golden crispy edge on the cauliflower be sure to flip it half way through baking.

Ingredients
  

  • 1 Large cauliflower

For the marinade-

  • 3 Tbsp Olive oil
  • 1 Tsp Oregano
  • 2 Tsp Lemon juice
  • 1 Tsp Paprika
  • 1 Tsp Garlic granules
  • 1 tsp Salt

For the topping-

  • 1 Tsp Extra virgin olive oil
  • 5 Diced kalamata olives
  • Fresh parsley

Instructions
 

  • Preheat the oven to 180C
  • Remove the leaves from the cauliflower and cut into thick steaks.
  • Lightly oil a frying pan and fry the cauli on both sides until browned.
  • Whilst cooking mix together the marinade ingredients to form a paste.
  • Remove the cauliflower steaks from the pan and brush on the marinade.
  • Place the cauliflower onto a baking tray and pop in the oven for 30 minutes flipping them half way through.
  • Make sure the cauliflower is cooked through by checking the thickest part of the stem is fork tender.
  • For the topping mince up the olives and parsley and mix with the oil.
  • Drizzle on to serve and enjoy!
