Thai curry paste is a life saver for when you want a dinner with some serious flavour but minimal effort. But I wont stop at using it for Thai curry alone- this paste is super versatile and can bring a pop of flavour to almost any dish!

Here I make a super speedy weeknight dinner in just 15 minutes and very few pantry ingredients and the result is a noodle dish bursting with flavor that will seem like it took ages to make.

All you need is a good quality Thai brand red curry paste, pre cooked udon noodles, coconut milk, garlic, soy sauce and sugar.

Add some protein and veggies if you like to make it a balanced meal.

Choosing a Thai curry paste

This recipe uses a Thai red curry paste which is medium in spice level and gets its color from red chilis. If you’d like something more spicy go for a Thai green curry paste made with green birds eye chilis that give it the green color and more heat. A milder version would be a yellow curry paste- with less chili but using turmeric for its yellow color. All curry pastes have a blend of aromatics giving them a punchy flavor but the chili level determines how hot it would be.

Ingredients needed for Thai udon

  • Udon noodles - I just used pre packed cooked udon but you can cook fresh, or use any noodles you like.
  • Red curry paste - A good Thai brand curry paste is essential for the best flavor. If you’re vegan- just watch out for fish in the ingredients as some brands aren’t vegan. This will also work with any other Thai curry paste- green, yellow, massaman etc…
  • Coconut milk – Full fat canned coconut milk works best but you can also use reduced fat. Soy or oat cream can be used instead.
  • Garlic – Fresh or minced garlic from a jar will work.
  • Soy sauce – light soy sauce is best. You can also use tamari or coconut aminos.
  • Sugar – Or sweetener.
  • Salt – Taste before adding as some curry pastes will already come salted.

The best toppings for udon

To make this dish into a full balanced meal you’d need to add a protein and some vegetables. Tofu, tempeh or seitan would be great and broccolini would be my preferred vegetable choice to top this dish. Feel free to add whatever you like to make the dish yours.

Ingredients
  

  • 1 Pack Udon noodles

For the sauce-

  • 1.5 tbsp Red curry paste
  • 150 ml Coconut milk
  • 1 Clove Garlic
  • 1 tbsp Soy sauce
  • 1.5 tsp Sugar
  • ½ tsp Salt

Instructions
 

  • Cook the udon to packet instructions and rinse under cold water to stop the cooking process.
  • Add the rest of the ingredients to a frying pan, mix well and simmer until sauce is lump free.
  • Add in the cooked noodles and heat through.
  • Serve and enjoy.
