A good ramen broth is often mistaken for being a really complicated thing to make with many components but actually you can make a delicious homemade ramen broth easily in just 5 minutes from pantry ingredients.

First we make what is known as a ‘tare’ which is a mixture of condiments to create a sauce base for the ramen. This usually contains the salty savory part in highly concentrated form such as miso paste. This is then watered down with a lighter broth, hot water or soy milk depending on what type of ramen you’re creating.

This particular tare is made from tahini, garlic, chili oil, rice wine vinegar and miso paste making a creamy, savory base ready to be mixed with hot broth to form the ramen.

All that’s left to do is add the cooked noodles and toppings of your choice and you have a delicious comforting meal.

So put the packet ramen sachets away and have a go at making this easy ramen broth for a tastier, healthier option.

How to make ramen broth

All good ramen broth starts with a tare- a mix of condiments to make the base flavour of the broth then add hot water, hot broth or hot soy milk and whisk until smooth for the perfect flavourful ramen broth.

Ingredients needed to make ramen broth

  • Vegan chicken broth- I use massels brand here in Australia but any broth is fine.
  • Tahini- You could also use peanut butter, Chinese sesame paste or any other nut butter.
  • Garlic- I prefer fresh but you can use powder if you like.
  • Chili crisp- Lao gan ma is my favorite but any is fine. Omit if you like.
  • Rice wine vinegar- Acidity helps to lift the broth, any vinegar is fine here.
  • Miso paste- White miso or red miso- just be sure to check that it is vegan. You can swap this to soy sauce instead if you like.

What noodles to serve in ramen broth

Authentic Japanese ramen is served with a thin wheat noodle that is mostly named as ‘ramen noodle’ in shops. They come in a circle bundle kept together with a strip of paper. However that being said you can use any noodle you like. I particularly like cheap instant noodles or udon in my ramen.

Ingredients
  

  • 250 ml Vegan chicken broth

For the tare-

  • 1 tbsp Tahini
  • 1 clove Garlic
  • 1 tsp Chilli crisp
  • 1 tbsp Rice wine vinegar
  • ½ tsp Miso paste

Instructions
 

  • Make up the vegan chicken broth.
  • To a deep bowl add the tare ingredients and stir until thickened.
  • Add a little broth and keep whisking.
  • Add the rest of the broth and whisk until there are no lumps.
  • Your ramen broth is done!
  • Add your noodles and any toppings you like.
