Vegan Granola Recipe

Whenever I buy granola there always seems to be an element in it that I don’t like. Lots of granola isn’t vegan due to honey and its super expensive. Therefore I decided it would be best if I just tried to make my own. The flavour combination of cherry and vanilla paired with the golden, sweet and toasted elements of the granola base is my favourite so far.

Making your own granola is actually super easy and I love having control of what goes in my food making sure there aren’t any unnecessary additives.

You can store this granola in a sealed jar for a couple of weeks and enjoy with your favourite yoghurt, berries and whatever other toppings you like for a delicious snack.

Vegan vanilla granola ingredients and substitutes-

  • Oats- The best oats to use are rolled oats as they add to the chunky cluster texture. If you use smaller oats the granola is likely to be more fine with not so many chunky clusters.
  • Sunflower seeds- I like a chunky seed in my granola; again to help with the chunky clusters. You can use pumpkin seeds instead.
  • Dried cherries- Dried cherries give a chewy element to the granola and a slightly sour taste which pairs lovely with the sweetness of the other ingredients. You can use any dried fruit you like or omit it all together. I also love a chocolate granola but be sure to add the chocolate chips once the granola is fully cooled to prevent melting.
  • Walnuts- I used chopped walnuts in this recipe as I had some in the cupboard but cashews or almonds would work really well in this granola.
  • Sesame seeds- I love the flavour of golden sesame seeds, they work well in this recipe. You can omit if you like but no other nut or seed will give the same flavour element so its sesame seeds or nothing!
  • Refined coconut oil- Refined coconut oil is flavourless, we add this to help toast all of the granola element without overpowering the taste. You can use other oils however the flavour may vary.
  • Rice malt syrup- Rice malt syrup has a nice rich flavour that gives an almost caramel flavour to the granola. Feel free to swap out for your favourite liquid sweetener if you don’t have rice malt syrup.
  • Vanilla paste- Vanilla gives the granola a great flavour and ties all of the elements together. You could use vanilla extract also.

FAQ-

  • I don’t have some of the ingredients is that okay?- Granola is super customisable so feel free to play around with it. However the non-negotiables are oats, oil and liquid sweetener. The rest you can add whatever you like.
  • My granola isn’t crunchy, what did I do wrong?- Granola will become more crunchy once fully cooled so make sure to be patient when waiting for it cool fully

Ingredients
  

  • 500 g Oats
  • 125 g Sunflower seeds
  • 125 g Dried cherries
  • 50 g Walnuts
  • 50 ml Refined coconut oil
  • 50 ml Rice malt syrup
  • ½ Tsp salt
  • 1 Tsp vanilla paste
  • 2 Tsp sesame seeds

Instructions
 

  • Preheat the oven to 150 C
  • In a large mixing bowl add all of the ingredients and mix well making sure all of the ingredients are wet and coated.
  • Line a baking tray and add the granola to the tray.
  • Spread into and even layer, like a sheet of granola.
  • Bake in the oven for 30-35 minutes, making sure to check on it regularly.
  • Remove from the oven once golden and leave to cool completely.
  • Once cool break the granola up into your desired sized clusters.
  • Store in an airtight jar for up to 2 weeks.
  • Enjoy with berries and yoghurt or however you like for a delicious snack.

Notes

Clusters- The most important thing you need to do to get good granola clusters is to not touch it when it comes out of the oven until it is fully cooled, then you can break it into clusters.
Baking time- Granola should be lightly golden rather than brown and it can turn very quickly in the oven so be sure to keep a close eye on it. Different ovens vary so be sure to check on your granola and when the edges are starting to turn from golden to brown, remove your granola and start the cooling process.
