Vegan Viral Sheet Pan Kebab

If you've spent any time on social media lately, you've probably seen the viral sheet pan kebab trend.

Sheet pan kebabs are made with seasoned meat pressed onto a baking tray and baked. It's an easy way to make a kebab with a lot less effort. This vegan version takes inspiration from the trend but is 100% plant based making it kinder for your body, the animals and the planet.

While many versions of a vegan sheet pan doner use tofu, I've opted for textured vegetable protein (TVP) instead. TVP is cheap, shelf-stable, and naturally high in protein. It has a firmer, meatier texture than tofu. It also absorbs whatever seasonings you cook it with, making it perfect for creating vegan meat alternatives.

This recipe is also a healthier alternative to your usual takeaway making it suitable to eat any day rather than a takeaway that you’d most like just have as a treat on the weekend.

The kebab mixture is baked in the oven to create a healthier baked kebab. Also everything cooks on one tray, making it an ideal sheet pan dinner for busy weeknights.

Serve your vegan sheet pan kebab in flatbread with salad and a tahini sauce, or turn it into a kebab bowl with rice & salad.

What is a sheet pan kebab?

A sheet pan kebab is based on the Turkish kofta- seasoned minced meat on skewers grilled. But the sheet pan kebab is an easier and less messy way of making it by adding the seasoned meat to a sheet pan, and separating the meat to make the kofta shape without the skewers.

What you'll need to make a vegan kebab

  • TVP- I love using TVP for its meat like texture but you could use tofu or your favourite vegan mince.
  • Vegan beef broth- Some beef stock powder is accidentally vegan. I use massels here in Australia but you can use vegetable bouillon if you cant find a vegan beef one.
  • Onion- Any color onion is fine.
  • Garlic- Fresh or powder are fine.
  • Spices- Feel free to adjust these to what you have on hand or to suit your cuisine preference.
  • Pepper paste- Turkish pepper paste or biber Salçası is similar to tomato paste but made out of red bell pepper. You can buy this in Turkish grocers, online or make your own. Substitute with tomato paste if you wish.
  • Ground flax- Ground flax seeds work as a binder. You could also use ground chia seeds or add a little extra AP flour.
  • Soy sauce- Dark or light
  • All purpose flour- Or GF flour for gluten free option.

Easy tahini sauce to go with kebabs

Tahini is a creamy, rich paste made of sesame seeds which makes the most delicious sauce perfect to drizzle onto kebabs. I make my tahini sauce by mixing 80 ml tahini with 1 clove of minced garlic, 1/2 tsp maple syrup, 2 tbsp lemon juice and 1/2 tsp smoked paprika. Whish until thickened then add warm water bit by bit to get a creamy sauce consistency.

Why use TVP instead of tofu?

TVP or textured vegetable protein is a shelf stable protein that has a much meatier texture than tofu and resembles meat more effectively. Its an affordable product that has a high percentage to protein and very little ingredients. Every vegan should have a bag of TVP in their cupboard!

  • Rehydrate the TVP with the vegan beef broth
  • Add grated onion
  • Add all of the other ingredients
  • Mix well to combine
  • Add to an oiled baking sheet
  • Shape into a rectangle
  • Separate into kebabs
  • Brush with oil
  • Bake for 15 minutes

Ingredients
  

  • 1 cup TVP
  • 1 cup Vegan beef broth
  • 1 Onion
  • 4 Garlic cloves
  • 1 tbsp Dark soy sauce
  • 1 tbsp Turkish pepper paste
  • 1 tbsp Ground flax
  • ½ cup All purpose flour
  • 1 tbsp Olive oil

Spice mix-

  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1.5 tsp Smoked Paprika
  • 1 tsp Salt
  • ½ tsp Pepper

Instructions
 

  • Preheat the oven to 200C/390F
  • Make up 1 cup of vegan beef broth with boiling water and mix with the cup of TVP.
  • Leave this to soak up all the liquid for 15 minutes.
  • Grate the onion and garlic into the mix.
  • Add the spices, flax, soy sauce, oil, pepper paste and plain flour and mix very well.
  • Oil a sheet pan and add the mix on to the sheet pan.
  • Form into a rectangle and cut into even strips.
  • Brush with oil and bake for 15 minutes.
  • Serve up in flat bread with tahini sauce and salad and enjoy!
